Monthly ONZI is a handcrafted yakju (refined rice wine) brewed every month using the same traditional method — but always with a freshly made batch of nuruk, the wild fermentation starter at the heart of Korean brewing.

Although the ingredients and process stay the same, each batch of nuruk carries subtle differences depending on time, temperature, and nature. As a result, every month’s wine shares the same core profile, yet reveals slight variations in aroma, texture, and finish.

This series captures the beauty of traditional fermentation as a living, evolving process — and invites drinkers to notice the nuance.

You can expect soft fruit tones, light acidity, and notes that vary from floral to herbal depending on the month. It’s said to pair especially well with seasonal spring dishes like minari pancakes or lightly battered wild greens like durup. Lighter seafood and tempura-style dishes also go well with its gentle complexity.
